Chocolate Heart Pancakes (Vegan + GF)
I’m a lover girl, of course I started my family’s day off with sweet, heart shaped pancakes infused with the highest vibration, love.
My daughter has been Earth side for almost 2 years now, and every single holiday that arises I’m faced with the question, “How will I make this special for her?”
We’ve been focused on creating traditions that feel good and in alignment with our families values, and today, heart shaped pancakes were born as a new tradition for us. Maybe they’ll become a new tradition for you, too?
These ones specifically are plant-based, gluten free, and the first words that came out of my husband’s lips when he ate them were, “Wow! These are GOOD.” Maybe it’s because I intentionally have perfected the vegan pancake, or maybe it’s because I infused so much love into them, either way, you need to try out this recipe for yourself.
Why plant-based?
Personally, my husband and I have chosen the plant-based path for nearly four years now and have never felt more mentally clear, our energy levels have skyrocketed and our bodies have never felt better. We process our foods faster and neither of our stomachs ache the same way they did while eating animal byproducts.
Scientifically, we chose this path because of the growing body of evidence that proves how eating a plant based diet can significantly decrease diseases such as heart disease, diabetes, and cancer.
Also, because of the high fiber content that is bioavailable in plants, we are able to benefit from the detoxification and cleansing that comes along with having the digestive system moving in a healthy way, allowing good absorption of nutrients.
Shortly after becoming plant-based, we became aware of how in alignment this way of living is for our bodies, our spirits, and our morals. Staying steadfast on living a life of love and compassion for every living being.
What makes these pancakes gluten free?
The base of these pancakes is gluten free oat flour. I achieved this by processing whole gluten free oats in my high-speed blender until very fine. You can also buy gluten free oat flour already processed in store.
Let’s cook!
Accessories needed for this recipe:
a heart shaped, stainless steel cookie cutter
a whisk
Ingredients needed:
2 + 1/4 cups gf oats, processed until fine OR 2 cups gf oat flour
2 cups plant milk
1/3 cup plant milk extra
2 tbs apple cider vinegar
2 tbs cane sugar
2 tbs baking powder
2 tbs nondairy chocolate chips
plant butter to top
pure maple syrup to top
If you are processing your own oat flour, start by putting 2 + 1/4 cups gluten free oats in a high-speed blender or food processor and blend. You will end up with 2 cups fine oat flour. If you are using store bought oat flour, use 2 cups.
Preheat your skillet and lightly oil
Mix together 2 cups of plant milk with 2 tbs apple cider vinegar and allow to sit and thicken for a few minutes. This will create a buttermilk substitute. NOTE: Do not add the additional 1/3 cup plant milk to this.
Mix your dry ingredients: cane sugar, baking powder, and chocolate chips to your oat flour.
Whisk your buttermilk substitute into the dry ingredients. The mixture will be the perfect consistency at first, after it sits for awhile, while you cook the pancakes and dependent on what brand of oats you use, the oats start to absorb the liquid. The extra milk comes in handy for this. You can add the extra milk little by little, and only as needed.
Put your stainless steel, heart shaped cookie cutter on the preheated and greased skillet. Slowly pour in the pancake mixture. Allow to cook low and slow, flip the pancake and cookie cutter once the pancake begins to bubble.
The pancake should be golden brown and fully cooked through. This may take a few minutes. Once done, movie the pancake and cookie cutter to a side plate so that you can slowly remove the heart shaped pancake from your mold. Repeat with all pancakes.
Enjoy fresh, topped with plant butter and warm, pure maple syrup.
