Creamy Alfredo Pasta (Vegan + Gluten Free)
This tasty Alfredo is a bowl full of comfort. It’s creamy, cheezy, and filling. It is perfect as a main dish or a lush side. This Alfredo is reminiscent to OG Alfredo, but is dairy free, gluten free, soy free, and our recipes are always vegan. It’s perfect for the entire family- it’ll make anyone, any age smile and begging for seconds!
This recipe pairs perfectly with our pictured Noochy Herby Tofu.
Here are the ingredients you’ll need:
1 1/2 cups Cashews
12 oz quality Gluten Free Pasta
2 tbsp Avocado Oil
2 cups plant milk (I use oat)
1/2 cup Nutritional Yeast
1/2 tbsp Garlic Powder
1 tbsp Italian Seasoning
1 tbsp fresh Lemon Juice
1/2 Purple Onion, chopped
6 cloves garlic, minced
Salt and Pepper to taste
Optional: Dairy free Parmesan
Let’s Cook!
Bring 4 cups of water to a boil and add your cashews, boil for 10 minutes.
Meanwhile, start your noodles in a large pot of water (following package instructions). Make sure you do not overcook, some gluten free noodles get soggy fast, so try to remove from heat once al dente.
While the noodles are cooking, heat the avocado oil in a small pan over medium heat. Once hot, add the chopped onion and garlic and sauté for 5-7 minutes until fragrant. Remove from heat.
Your noodles should be done or close to being done at this point, check to see if they’re al dente and if so, drain your noodles, then add them back to your pot and wait for sauce to be done.
Next, drain the cashews and discard the water. Add them to a high powered blender along with the garlic powder, italian seasoning, the cooked onions and garlic, plant milk, nutritional yeast, lemon juice, salt, and pepper. Blend until very smooth and a thick, creamy Alfredo Sauce is ready to be poured over your pasta.
On the lowest heat setting, mix together your noodles and sauce. Heat until warm, and enjoy immediately!
