Noochy Herby Tofu (Vegan + Gluten Free)
This is an easy recipe that can be added to your monthly meal rotation that you won’t grow old of. It’s satisfying, filling, and the perfect plant-based meal staple. This nutrient dense recipe is coated with a mix of herbs, seasonings and nooch before baked to perfection.
What is Nooch?
Nooch is the nickname that Nutritional Yeast has gotten over the years, which is what makes this recipe satisfying, umami, yummy, and flavorful! It’s great for things you want to have a cheezy profile, and assists in making this “meat-y craving” delectable!
Why use Nutritional Yeast?
Aside from the great flavor that Nutritional Yeast provides as a seasoning, it also is packed with fiber, folate, and vitamin B12. These are great additions to any diet, and brings potential health benefits such as improved digestion and immune support.
Your entire family and all of your friends, vegan or not, will enjoy this delicious protein- it’s dairy, nut, and gluten free, and this specific recipe can also be made soy free!
Pressed tofu is perfect to use for a cheap lunch or dinner, and if you’re looking for a soy free option, sub the tofu for original Pumfu and it’s just as delicious!

Here are the ingredients that you’ll need:
2 packs extra firm tofu
1 tsp Rosemary
1 tsp Garlic Powder
1/4 tsp Paprika
1 tsp Onion Powder
1 tsp Sage
1 tbsp Italian seasoning
1/2 cup Nutritional yeast
a dash of nutmeg
1/4 cup buckwheat flour (I recommend Anthony’s Organic Buckwheat Flour)
Salt & pepper to taste
2 tbsp avocado oil
Let’s Cook!
Start by pressing excess liquid out of your extra firm tofu for at least 30 minutes.
Once tofu is pressed, preheat your oven to 425°.
Cut your tofu into triangle halfs.
Next, in a bowl whisk together the Rosemary, Garlic Powder, Paprika, Onion Powder, Sage, Italian Seasoning, Nutritional Yeast, Nutmeg, Flour, Salt and Pepper.
Now pour your avocado oil in a separate bowl.
Coat a piece of the tofu in oil.
Next place the tofu in the bowl of dry ingredients and coat it well with the dry mixture on both sides. Then place on your baking sheet.
Repeat with each piece of the tofu.
When ready to bake, place the baking sheet in the oven. Cook for 20 minutes, then flip and cook for another 15-20. You want the tofu to be golden brown and crispy.
Serve hot and fresh with pasta, rice, potatoes or veggies- whatever your heart desires.
